gardein clubhouse sandwich
- 8 tblspmayonnaise (vegan option available)
- 1/2lemon, freshly squeezed
- 1 pkggardein chick'n scallopini
- 2 tblspvegetable oil
- 8 piecesbread slices (your favorite)
- 1 cuparugula
- 8 tomato slices
- 8 piecestempeh bacon
preparationIn a small mixing bowl or food processor add mayonnaise, avocado and freshly squeezed lemon, mix well.
Sauté scallopini from frozen in a non stick pan over medium heat for 1 minute on each side. Add 3 Tbsp of water (per 2 pieces) cover for 2 minutes. Uncover, turn and cook for an additional minute.
Remove from pan and set aside on cutting board. Meanwhile, toast bread slices.
Spread each bread slice with avocado mayo, build each sandwich from the bottom up with arugula, tomato slices, tempeh bacon and cooked gardein chick’n.
Cut each sandwich into half and serve.
