  • 1ear of corn, husked
  • 1poblano pepper
  • 1 tbspchopped cilantro
  • 1tomato, small, seeded and chopped
  • ½ tspsea salt, fine
  • ¼ tspblack pepper coarse
  • ¼ cupolive oil

preparation

Preheat a grill to medium high heat. Brush the corn and poblano pepper with olive oil; cook over grill for 10-12 minutes until corn and poblano pepper are well caramelized. Slice the corn from the cob, and remove core and seeds from poblano. Dice the poblano into small pieces. Combine corn, poblano, cilantro, tomato, salt and pepper, and mix well.

Pair with: black bean, garden veggie or ultimate beefless burgers.
